From 2-8 November 2020, globally, people celebrated International Sherry Week.
In collaboration with Cinoco and Gonzalez Byass, I created a series of six cocktails with their core range of Sherries. The drinks ranged between easy to difficult, sometimes inspired by classic Sherry tipples, other times completely original creations, each time showcasing Sherry as star of the show!
Enjoy!
1. OLOROSO & GINGER HIGHBALL
made with Gonzalez Byass – Alfonso Oloroso
Ingredients:
– 1 part Oloroso Sherry
– 2 parts Ginger Beer (or Ginger Ale)
How:
Build directly in glass
Stir gently with plenty of ice
Garnish with a lime twist.

2. GRAPE & GRAIN
made with Gonzalez Byass – Tio Pepe Fino
Ingredients:
– 30ml/1oz Lowland Blended Whisky
– 22,5ml/0.75oz Fino Sherry
– 15ml/0.5oz Dry Vermouth
– 15ml/0.5oz Nardini Mandorla Almond Liqueur
How:
Stir all with plenty of ice
Strain in coupe
Flame & garnish with lemon zest

3. DOUBLE SHERRY SWIZZLE
made with Gonzalez Byass – Viña AB Amontillado
& Gonzalez Byass Nectar Pedro Ximenez
Ingredients:
– 45ml/1.5oz Amontillado Sherry
– 15ml/0.5oz Pedro Ximenez Sherry
– 15ml/0.5oz Reposado Tequila
– 10ml/0.33oz Lime Juice
– 15ml/0.5oz Pineapple Juice
How:
Add all ingredients to a high glass
Fill 2/3 with crushed ice
Swizzle until ice-cold and well-mixed
Top with more ice & Garnish.

4. CUT STICK RUM PUNCH
made with Gonzalez Byass – Leonor Palo Cortado
Ingredients:
– 45ml/1.5oz Angostura 7 Rum
– 30ml/1oz Gonzalez Byass Palo Cortado Sherry
– 30ml/1oz Pineapple Juice
– 22,5ml/0.75oz Lime Juice
– 15ml/0.5oz Vanilla Syrup
– 1 drop Almond extract
– 2 dashes Angostura Cocoa Bitters
How:
Shake all with crushed ice
Dirty dump
Top with more ice
Garnish with dark chocolate

5. RIDING FOR FALL
made with Gonzalez Byass Solera 1847 Cream
Ingredients:
– 45ml/1.5oz Gonzalez Byass Cream Sherry
– 22,5ml/0.75oz Brandy de Jerez
– 22,5ml/0.75oz Lemon Juice
– 10ml/0.33oz Maple Syrup
– 2 dashes Rhum JM Cocoa Bitters
– 4 dashes Angostura Bitters (float)
How:
Shake all but Ango Bitters with crushed ice
Dirty dump
Top with ice
Float Ango bitters
Garnish

6. BLOOD, SOIL & CANE
made with Gonzalez Byass Tio Pepe Fino
Ingredients:
– 45ml/1.5oz Rhum JM Agricole 50%
– 45ml/1.5oz Fino Sherry
– 10ml/0.33oz Yellow Chartreuse
– 1 dash JM Fleur d’Atoumo Bitters
How:
Stir with ice
Strain in coupe
Add one drop of red food coloring
Ungarnished
